When you work at a sheepfold, you have many responsibilities. In particular, you have to keep an eye on the black sheep, which tends to hide on Mount Cerro Punta, located in the Tierras Altas district, Chiriqui province, Panama. Following its traces, I found a special place where around the 1950s and 1960s, Typica coffee was planted. However, due to the low price of coffee in the 1990s, the decision was made to remove the coffee and dedicate the land to vegetable cultivation.

 

This coffee was harvested on March 12, 2020. In this process, after being carefully selected, the coffee is taken directly for sun drying on African beds, where it will stay for 28 days until it reaches a moisture content of 11%.
