The Karimikui Coffee Factory is located at the foot of Mount Kenya and is affiliated with the Rungeto Farmers Cooperative Society. On a 6-acre site, it collects and processes cherries from approximately 600 small-scale farmers from the Kirinyaga region, serving the villages of Githureia, Gituba, and Kiamugumo.

 

The cherries are carefully handpicked and meticulously sorted to use only the ripest ones. The beans are then pulped using a disc pulper, sorted by density, and subjected to controlled fermentation for 16-24 hours under shaded conditions. After fermentation, they are washed and re-sorted before being soaked in clean water for 16-18 hours.

 

The beans are then sun-dried on raised beds for about 20 days, ensuring proper airflow to prevent unwanted fermentation. After parchment removal, the beans are sorted by size and vacuum-packed to maintain freshness.
