Today, we go back to the origins, the birthplace of Pink Bourbon, in the Specialty Coffee Paradise of Colombia, Acevedo, San Adolfo, at Aroma Nativo farm, owned by Luis Marcelino.

 

Over the past four years, Aroma Nativo has connected Colombian coffee farmers with renowned roasters worldwide. In 2022, founder Luis Marcelino launched the Veci Project: a collaboration between coffee producers with strong agronomic practices but facing infrastructure and processing space constraints, and Aroma Nativo, contributing expertise in fermentation and processing facilities in the south of Huila and the Quindio Department.

 

For this special lot of Pink Bourbon, the ripest cherries were used. They underwent an anaerobic fermentation in cherry, were then depulped, and went through another fermentation stage in barrels with native bacteria and special yeast. The drying stage for 14 days in a parabolic sun dryer was followed by stabilization for 3 months in a temperature-controlled room.
