The fertile soil, enriched with volcanic ash, along with annual rainfall ranging from 1700 to 2000 mm, creates an exceptional environment for the development of the coffee beans. Each coffee cherry is carefully handpicked, selecting only the ripest ones. After harvest, the beans are meticulously hand-sorted, removing any defects. The drying process takes place on raised beds under the region’s gentle sun, in carefully controlled temperature conditions, until the ideal moisture level is reached, necessary for developing a rich and balanced aromatic profile. This microlot consists entirely of the Caturra variety, a prized strain originating from Minas Gerais, Brazil. A natural mutation of the renowned Red Bourbon, Caturra stands out for its abundant yield and increased resistance to disease, becoming a favorite among enthusiasts.In every drop of this coffee, you can taste not only the passion and dedication of the young farmers at El Indio but also the natural richness of the Tolima region.
