I have an affinity for Armenia, the capital of the Quindio Department, where at 1550 m altitude, you'll find Aroma Nativo farm owned by Luis Marcelino.

 

Over the past four years, Aroma Nativo has connected Colombian coffee farmers with renowned roasters worldwide. In 2022, founder Luis Marcelino launched the Veci Project: a collaboration between coffee producers with strong agronomic practices but facing infrastructure and processing space constraints, and Aroma Nativo, contributing expertise in fermentation and processing facilities in the south of Huila and the Quindio Department.

 

After harvesting and selection, the coffee underwent a 120-hour anaerobic fermentation in cherry, followed by depulping and another 36-hour fermentation in sealed barrels with geisha lactic bacteria. It was then dried for 13 days in a parabolic sun dryer and stabilized for 3 months in a temperature-controlled room.
