In western Rwanda, at the Akagera station, the Red Bourbon variety is grown at altitudes ranging from 1,650 to 1,810 meters. Once delivered to the station, the cherries are carefully sorted by ripeness and then floated in water to separate the denser, higher-quality fruit. The selected cherries are placed in sealed barrels and kept in the shade for a 72-hour dry anaerobic fermentation, with temperature carefully monitored throughout the process. This controlled approach highlights the fruit profile of the coffee, with notes of plum, pear, peach and apricot.
